Dry Figs + Almonds / Higos Secos + Almendras

Hi there, it´s been a while. I still can´t seem to get used to having a blog. I´m not sure if it feels right just yet. Do you have those periods of time when you just wanna stay away from the Internet as much as possible for some strange reason?

Anyway, let´s see how this post goes... shall we?

Hola, ha pasado un buen tiempo. Me parece que todavía no me he podido acostumbrar a tener un blog. No estoy segura de si se siente bien por el momento. ¿Han sentido alguna vez la necesidad de mantenerse lo más lejos posible de internet por alguna extraña razon?

De todos modos, vamos a ver como sale este post... ¿de acuerdo?


Last Friday I stepped out of my comfort zone and tried to make a non vanilla flavoured cupcake. At first the sound of dry figs and almonds didn´t really sound great inside my head. I actually thought they were gonna taste awful but I was surprised to find out I was completely wrong. They were SO GOOD! I found the recipe online, here´s a link for it: Dry figs + Almonds It´s in Spanish, so I will translate it to English next:

Ingredients:

250 gr. pastry flour 
225 gr. sugar
250 ml. water
120 gr. chopped almonds 
85 gr. of figs 
30 gr. sunflower oil
5 g. sodium bicarbonate 
2.5 gr. salt
A teaspoon of almond extract (to taste)
Chopped almonds, for garnish 

Preparation:

Step 1: Preheat oven to 190 ° C.In a bowl chop the almonds and the figs. Do not reduce it to powder, simply chop. Mix the flour with the salt and sugar.
In another bowl, mix the chopped figs and almonds with water, sunflower oil and the almond extract (I used just a drop of the extract, but the recipe says you can skip it)
Then mix the liquid ingredients (mixture of water, oil, figs and almonds) with the dry (flour, baking soda, sugar and salt).

 
Step 2: Fill the molds with the mixture and then pour some chopped almonds over the muffins. Now it´s time to put them in the oven. The recipe says to leave them for about 25 minutes but I left them for 30 minutes.

I really hope you try this recipe. They were delicious!

El viernes pasado salí de mi zona de confort y traté de hacer muffins sin sabor a vainilla. Al principio, la idea de utilizar higos secos y almendras no sonó muy bien en mi mente. Realmente pensé que iban a tener un gusto terrible, pero me sorprendí al descubrir que estaba completamente equivocada. ¡Estaban buenísimos! Vegan Pancakes / Panqueques Veganos

Today I decided I was gonna make something sweet but healthy at the same time. Making vegan pancakes was my first option just because I knew it was gonna be fast and easy for a lazy day like today.

I found a recipe online (click here) and in 10 minutes I was already tasting my first pancake. It was actually easier than I expected!

Ingredients

1 cup of whole wheat flour
tablespoon of brown sugar
1 pinch of salt
2 tablespoons yeast
1 cup almond milk  
2 tablespoons olive oil (I used sunflower oil)

Just mix the dry ingredients and then add the almond milk with the olive oil. Blend everything until it´s smooth.
Put a little bit of oil in a hot pan and then add some the mixture with a big spoon. In the recipe I found it says to wait until bubbles are formed to turn the pancake. Then wait for about 3 minutes and your pancake should be done.

They turned out to be amazing! I ate them with quince paste and also blueberry jam but you can have them with whatever you prefer.

Hoy decidí que iba a preparar algo dulce pero saludable al mismo tiempo. Hacer panqueques veganos fue mi primera opción simplemente porque sabía que iba a ser rápido y fácil para un día de descanso como el de hoy.

Encontré una receta online (click aquí) y en 10 minutos ya estaba saboreando mi primer panqueque. ¡En realidad resultó ser más fácil de lo que esperaba!

Ingredientes

1 taza de harina de trigo integral
1 cucharada de azúcar morena
1 pizca de sal
2 cucharadas de levadura
1 taza de leche de almendras
2 cucharadas de aceite de oliva (Yo utilice aceite de girasol)

Simplemente hay que mezclar los ingredientes secos y luego añadir la leche de almendras con el aceite de girasol. Mezclar todo hasta que esté suave y sin grumos.

Poner un poco de aceite en una sartén caliente y luego añadir un poco de la mezcla con una cucharon. En la receta que encontré dice que hay que esperar hasta que se formen burbujas para dar vuelta el panqueque. Luego esperar unos 3 minutos y el panqueque debería estar listo.

¡Resultaron ser increíbles! Los comí con dulce de membrilo y con mermelada de arandanos, pero se pueden comer con lo que prefieran.

APPLE TART

Today I woke up feeling inspired. Suddenly I got this idea out of nowhere. I was gonna make an apple pie and I had the whole thing planned already. I was gonna search for a recipe online and I was gonna search for every single ingredient even if I had to get dressed and leave the house to do so.

I didn´t have some ingredients so I went to the market with my bike, enjoying the sunny day.

I got back home feeling excited about being able to do this new thing but most important, being able to feel excited about something other than staying in bed late on a Saturday morning.

So without further ado, here are some pictures of my little creation:


Hoy me levanté sintiéndome inspirada. De repente se me ocurrió hacer una tarta de manzana. Busqué la receta en internet y me aseguré de tener todos los ingredientes y si no los tenía no importaba, porque iba a hacer el sacrificio de vestirme y salir de mi casa para buscarlos.

No tenia algunos de los ingredientes, por lo cual fui al mercado en bicicleta, disfrutando el dia soleado.

Volvi sintiendome emocionada por poder hacer algo nuevo pero ademas porque iba a hacer algo distinto a quedarme en mi cama un Sabado por la mañana.

Ahora paso a mostrarles mi pequeña creacion:

RECIPE:

Ingredients:
 
For the dough: 

125 g margarine or butter (room temperature, softened) 
Sugar 125 g 
8 g of vanilla sugar 
1 pinch of salt 
Juice of half a lemon 
3 eggs 
200 g flour 
2 teaspoons baking powder 
2 tablespoons milk

For the surface:

25 g butter
750 g of apples
 
1) Preheat oven to 180 º C.
2) Use a pie pan of about 25 cm in diameter and a little butter or oil to it´s surface and reserve.
3) Peel the apples, remove the heart and cut into quarters. ( I cut them as thin as I could)
4) For the dough, toss the softened butter in a bowl and gradually add sugar, vanilla sugar (I used vanilla extract), a pinch of salt and half a lemon juice and continue mixing.
5) Add eggs one by one and keep mixing. It is important to gradually add the eggs one by one, beating in between.
6) Before you add the flour, mix with 2 tablespoons of baking powder and then incorporate it into the mixture. Continue beating and add the 2 tablespoons of milk.
7) Fill the mold with the dough and smoothed with a spatula. Place the apples in a crown or top of the dough.
8) ENJOY EATING IT.

VANILLA AND CHOCOLATE CHIPS CUPCAKES

Today I woke up feeling like I needed to have something sweet. That´s why I decided to make cupcakes. I had never made vanilla cupcakes because I usually go for chocolate ones. I guess I needed a change and try something new.

I found the recipe in Spanish so I´m not sure if you´re gonna understand the measurements. I´m sure you all know how to make cupcakes but.. just in case if you have any doubts just ask!

Recipe

Butter 180 gr.
Sugar 130 gr.
Eggs 3
Vanilla essence 1 ts
Flour 250 gr.
Baking powder 20 gr.
Milk 100 cc.
Chocolate chips AS MANY AS YOU WANT

1- I usually place the butter near the stove so it melts a little and it´s not hard. When it´s soft enough put it in a small bowl and mix it with the sugar. Add the eggs and the vanilla essence and mix it all together.

2- Mix the flour with the baking powder and start adding it to the previous mix along with the milk.

3- Add as many chocolate chips as you want!

4- Put it in the oven and they should be ready in 20 minutes.

What are your favourite kind of cupcakes? Mine are chocolate ones, but these were pretty good too! :)

Hoy me levanté sintiendo que necesitaba comer algo dulce. Por esta razón decidí hacer cupcakes. Nunca había hecho cupcakes de vainilla porque siempre hago de chocolate. Creo que necesitaba un cambio e intentar algo nuevo.

Encontré la receta en español entonces no se si van a entender como son las medidas. Estoy segura que saben hacer cupcakes pero por si acaso no duden en preguntar si tienen alguna duda.

Receta

Manteca 180 gr.
Azúcar Rubia 130 gr.
Huevos 3
Escencia de Vainilla 1 cdta.
Harina 250 gr.
Polvo de Hornear 20 gr.
Leche 100 cc.
Chips de Chocolate TODOS LOS QUE QUIERAN

1- Usualmente pongo la manteca al lado de una hornalla para que se ablande y asi no está tan dura. Cuando está lo suficientemente blanda poner en un recipiente y mezclarla con el azúcar. Agregar los huevos y la escencia de vainilla. Mezclar todo.

2- Mezclar la harina con el polvo de hornear e ir agregando a la mezcla anterior en forma alternada con la leche.

3- ¡Agregar todos los chips de chocolate que quieran!

4- Poner a horno moderado a fuerte por alrededor de 20 minutos.

¿Cuáles son sus tipos de cupcake favoritos? Mis favoritos son los de chocolate pero ¡estos también me gustaron mucho! :)
